This isn’t a complete walkthrough because some choices won’t affect the ending you’re going for, but give this a try:

-Make sure to prioritise Hunting throughout so it’s high enough to win the tournament, and to be used later
-Also try to have high Courage
-Give money to the child at the Inn (Chivalry 23)
-Ask around the stables whether they have seen Baron Strange (Relationship 55)
-Say Bigod criticized your service to the Crown (Loyalty 19)
-Choose to investigate the priest, then run for the church door to fetch help (Relationship 59)
-Don’t purchase the falcon
-Say you admire Catherine and hope your feelings may be returned (Honor 9, Relationship 63)
-Go to the fortune-teller, choose Sibyl, pay her price, and say you value honor to your family (Honor 18)
-Do not eat the fruit
-Go to the dancer’s tent, pay the piper’s price, and refuse to endanger your oath (Honor 22)
-Go ahead to announce Catherine at the Abbey (Relationship 67)
-Avoid discovery at the dinner-table (Choose your highest skill for the first test, and whichever relationship value for the second) (Loyalty 27)
-Agree with the prioress if she confronts you
-Agree with Catherine that the Baron is possessed of ill intent (Honor 26)
-Visit Pyers again, and say he should already know your purpose
-Bypass the Baron’s guards by approaching unseen, then ask the Baron his business (Relationship 68)
-Defeat the 3 guards alongside Catherine by approaching them unseen (Honor 33)
-Ask Catherine for her favor, then win the tournament (Relationship 82)
-Look among the competitors for the Baron, then report to Catherine (Loyalty 34)
-Refuse to side with either side in the argument after the tournament (Loyalty 41)
-Either avoid being captured by the Baron in Chapter 6, or escape successfully - the details are not important as long as you don’t fail an escape attempt, which loses Money and Honor
-Avoid being escorted out of the Clifford tent in Chapter 7
-Take the Path of Needles
-Carry the old woman across
-Look into the woods for inspiration when you meet the riddling child
-Avoid being captured when entering the Castle
-Explore the castle dungeon, then intimidate the thief
-Lead the monster near the top of the castle to one side, then run past it
-Defeat the lord using your courage
-Say your connection with your companion matters least to you, when examining your resolve in Chapter 10

That should get you to all 3 endings with the required stats, and a bit of wiggle room if anything goes wrong?
