I’d like to see a “hive/colony” sort of ability available. You’d be able to forego the standard ranged options of breath weapons and throwing objects to have your kaiju be a host for swarms of smaller creatures. They roll through a city with thousands of giant, flying murder bugs coming from holes in their skin that they can control with pheromones or a psychic signal or something.

I want to be an ancient dragon-like terror who awaken from deep slumber with numerous scars on the body as proof of many desperate attempts made by humans in the past to stop the monster.
As for more unusual kaiju, I would like monster who used to be a spaceship but got hijacked by alien organism that take control of the ship and turns it into organic-machine creature. It’s probably going to be too weird for story, though.

Talking about Kaijus, not monsters, the first thing that comes to my mind is that it should be huge, very, very HUGE.
Through my username you may find I like Ultraman series,through these series of Fantasy Tokusatsu TV drama,I got to know a lot of Kaijus,so my impression of KAIJU mainly comes from here.
I don’t think they should be limited to standing on two feet.In Ultraman, they could be more feet, they could be no feet, they could be humanoid, they could be no fixed shape.
But I still prefer that kaiju can has a head and eyes, they can express a lot of emotion,maybe it’s because people are trying to understand creatures they don’t know 
and I do like something more mechanized, or a scary exoskeleton or carapace,rotten, unappealable skin seems good too

I think something I would definitely love is having different texts when it comes to your appearance. A lot of times when we’re given a lot of options in the beginning of the game the mid and end still go almost word for word like our choices didn’t really matter
