The problem I have with a lot of dating sims isn’t the lack of choices.
It’s that so many of the choices are boring, one-dimensional, archetypes. I would much rather play a game with very few options if it meant those options were we’re more fun/dramatic/sexy/etc.
Honestly I think a storygame with only one romantic option could be good if that one love story was written well.
I’ll admit though that’s an easier perspective to have if you’re bi. I can understand how someone who is really only attracted to one gender might not enjoy a game about falling in love with someone who’s gender they’re not interested in.

I prefer a mix.
I usually don’t like the idea of straight man or gay woman as a protagonist. It’s sort of jarring at me, that contrast.
I know there’s some games, where the male protagonist is flipped to female, and nothing else chances. Everyone treats the protagonist as if they were male, right down to NPCs referring to your character as male, and reacting as if they’re a straight male, even if she’s female.
I also dislike that the straight guy can go right through the game avoiding any possible gay content, save for all those female characters, women, who may be attracted to other women, but they’re always going to pick him if he asks. And I’d assume all of those female romantic interests are bi/pan, so maybe he’ll get to ogle them kissing each other, and have his sexy threesomes.But they’re never going to pick anyone but him.
But I really, really dislike harem games and my views are certainly biased.
