As for a founding myth, there are several competing ones that emerged during the period of religious strife before the Church of Gaia consolidated, as such Kyro’s history is rather murky, being built on the ruins of whatever it was that came before the Iudians.

Speaking of the sorceresses, does an all-female order of shadowy, magically inclined advisors and political masterminds, allegedly serving an Imperial throne while furthering their own ends, remind anyone of Dune’s Bene Gesserit?

To go a little further, I wouldn’t be shocked if we eventually find out that the “creation myth(s)” espoused by the Church of Gaia are akin to what the Gesserit do through their Missionaria Protectiva: placing into “primitive” peoples’ minds the seeds of myths and prophecies that can further reinforce their control over Iudian society and/or guide it towards a path desired by the Church leaders. That is to say, they do some social engineering.
And truth be told, the Mater Sortiariorum aka the Mother of Sorcery is rather scary. She is described as positively ancient, with a great command over “terrifying magic”. Likewise, she is dressed in red and has her face constantly veiled. She also speaks about the future quite a lot, and seems to possess knowledge that normally one shouldn’t, like Julia’s disease (maybe she poisoned her? definitely a possibility). Quite a few comparisons can be drawn to the Bene Gesserit’s supreme authority, the Reverend Mother Superior.
Not related to the above, but I love how she basically says to a Sorceress MC “You’re in danger? Here, take this grenade (yes, a grenade). Just throw it at your enemies and they’ll blow up”. Truly the Mother of Sorcery, inventing grenades before it was cool.
I don’t know if this is a spoiler or if this is possible within this universe but theoretically if a man learned women’s magic and was caught what would be his punishment? (hides my MC with the aim of knowledge)

As said above, officially there is no punishment, because it’s viewed as not possible.
Now unofficially…who can say? Certainly if any men have attempted to learn sorcery before, they are not heard from again.
Though on the point of the man called the Witch King, the official Iudian stance is that he gains his magic from being possessed by demons, witchcraft being the “dark magic” to sorcery’s “white magic” to use terms to draw an analogy. At least, that is what the Church and Empress say.
