Preference: Hidden choices

Personally I only use *selectable_if when the choices are not spoilers, and it doesn’t ruin the “feel” of the game. As in, if there is a big emotional choice, or I want the player to be really involved or personally connected to a choice, I will just use *if. So pretty much I just end up using *selectable_if on early choices to give the player some idea of what the game can do. But that’s just me and I don’t think there is really a wrong answer.

I would agree with that.

Let’s say your character has $100 but dinner at a top restaurant costs $200, so your character can’t afford that option. It’s good to still be able to see it as an option, so you know that you have to either make more or save more earlier on if you want to go this route.
