Personally, I would do it for 2 reasons - immersion and red herrings. From what we’ve seen so far, I wouldn’t put it past Jo to do something of the sort. For immersion sake, personally, I write a character according to their preferences - so making some random NPCs their preferred gender just for funsies because I would think that in real life that would be something that would catch their attention.
But I’m more than 60% sure that it’s a red herring. It seemed too easy to spot. But who knows, it might not be.

Much as I would like to do this, it would probably be too difficult to tell why without giving away even more spoilers and/or being too long. Important options don’t usually depend on your stats, but rather on prior decisions.

Ooh! I didn’t know that, but it makes sense. Phew, all this coding + all this excellent writing! I guess I’ll be delving into the code of the game, just to see what’s going on with the decisions. But greyed out would still be nice!

Yes! Romance is completely optional. All excursions with ROs have at least two versions: one romantic and one platonic.

Both Nick and Button can have romantic interest in Sally. More of a love V than a love triangle.

Sally has a crush on Nick you can pair them together or go the angst route of doing her romance. Nick doesn’t have feelings for her in the beginning unless you try to get them together I believe.
