For games that showcase the use of Choice Script (and that have not been mentioned by @Havenstone and others) I would suggest looking at the following:

Creatures Such as We: a game that uses very little mechanics to achieve its impact (Awarded Second Place in the 20th Annual Interactive Fiction Competition (IFComp))

Tin Star: A perennial favorite that was ground breaking in both depth and breadth when released.

Choice of the Cat: A deep and endearing game from the perspective of a cat; proving that not all protagonists need to be human.

Choice of the Deathless: One of the first adaptations of an existing world into Choice Script.

Wayhaven Chronicles: Book One: A brilliant adaptation of the Virtual Novel Dating genre of games into Choice Script formatting.

Divided We Fall: A dual-perspective political history game about the Spanish Civil War – one of my personal favorites.
There are a lot more games you can glean from the 100 or so posts here but I believe these games give you a strong foundation to begin with.
